On
this occasion, we would also like to dedicate a few lines
to our famous South Tyrolean bacon. This fine, slightly smoked
speciality comes from the mountain farms on the picturesque
slopes of Jenesien, which is overlooking Bolzano, and is still
produced in accordance with the traditional recipes. Just
take: the tender meat of the best pigs, first-choice spices,
juniper wood for the smoking process, a lot of hands-on experience
and great pride in deep-rooted traditions. Just have a taste
of this special bacon together with our high-quality wines
or spoil yourself and combine it with another South Tyolean
speciality, the Alpine Brittle Bread ("Schüttelbrot"), and
a tasty local cheese.
